If you can stop the water at the meter or an isolation tap and nothing is flooding, it can usually wait. A dripping tap, a running toilet or a slow drain will not damage the house overnight. A leak you cannot stop, sewage coming up inside, or a gas smell should not wait.

For a single leaking tap, toilet or sink, there is often a small isolation tap under or behind it. Turning the water off before you call limits the damage and can turn an emergency into a next-day job.
